Chicken Tortilla Soup

Tortilla SoupLast Sunday, we finally got some beautiful cool Fall weather here in Austin, so, of course, I had to make one of my favorite super simple soup recipes: Chicken Tortilla Soup.

This recipe is filled with protein, is Paleo compliant and the broth is amazing for supporting your bones, ligaments, joints and skin, as well as providing lots of valuable vitamins and minerals. It’s a perfect quick & healthy meal that your family will love!

Ingredients:

  • 8 cups of bone broth – find my homemade crock-pot bone broth recipe here
  • Meat from whole chicken (shredded) – find my easy crock-pot chicken recipe here
  • 1 can organic diced tomatoes (Mexican style)
  • 1 can organic tomato sauce
  • 1/4 cup diced fresh cilantro
  • 1/2 yellow onion
  • 4 cloves garlic
  • 3 tablespoons coconut oil (or grass-fed butter)
  • 1 tablespoon salt
  • 1-2 teaspoon(s) cayenne pepper, depending on spiciness preference
  • 1 teaspoon cumin
  • Optional: You can also add some chopped veggies – carrots & kale are my favorites in this soup

Preparation:

  1. Dice onion and garlic and put in large soup pot with coconut oil.
  2. Saute garlic & onion on medium heat until onion is soft.
  3. Add all other ingredients and simmer for at least 30 minutes (or cook in crock-pot on low all day for even better flavor!)

Tortilla ChipsGarnish with a squeeze of lime, freshly grated raw cheddar cheese and some salty tortilla chip crumbles.  When it comes to tortilla chips, there is only one brand that I can recommend… I am beyond excited about Jackson’s Honest NEW tortilla chips cooked in coconut oil.  They are the only brand that makes tortilla chips with coconut oil; all the others use super toxic vegetable oils.  Plus, they are organic, made with non-GMO corn and gluten-free. I found them at my local Whole Foods – you must pick up a bag!

Seasonal Diffusing Blends

Pumpkins on the porch, mums planted and the house smells like apple cider and cinnamon.  No more candles for me… I’m now diffusing essential oils to fill my home with fragrance AND get some added health benefits.

One of my favorite ways to use essential oils is through aromatherapy. Research has shown that the fragrance of essential oils can have a profound impact on the limbic system (our emotions), the hypothalamus (our hormones), and on the oxygenation & function of the brain.  Today, I’m sharing my favorite essential oil blends to put in my diffuser each season (but, of course, you can use them anytime!)

Fall BlendFall:

  • Citrus Fresh (3-4 drops) – This refreshing blend combines Orange, Tangerine, Grapefruit, Lemon, Mandarin, and Spearmint oils. It is purifying to the air and helps with focus and energy.  *If you don’t have the Citrus Fresh blend, orange or tangerine will work too.
  • Cinnamon Bark (3-4 drops) – This is a powerful oil for boosting the immune system and is perfect for the sniffles that Autumn brings.  For a variation, sub a couple of drops of Thieves blend for cinnamon as an additional immune boosting & disinfectant, with the added notes of clove and rosemary.

Winter BlendWinter:

  • Peppermint (2 drops) – Peppermint stimulates the mind, helping you focus. It is also great for the respiratory system and to soothe digestion.
  • Lemon (2 drops) – Lemon is an invigorating and warming fragrance. It helps to cleanse the air, to boost immunity and promote relaxation.
  • Valor (2 drops) – The Valor blend originated with Roman soldiers who put it on to promote courage before going into battle. It instills great confidence and promotes alignment of the spine. This blend contains Spruce, Rosewood, Blue Tansy and Frankincense.
  • Joy (2 drops) – One of my favorite blends for the wintertime blues, Joy promotes positivity and hope.  It eases tension and brings harmony to the household for those days everyone is stuck inside. Joy contains a blend of some amazing oils: Bergamot, Ylang Ylang, Geranium, Lemon, Coriander, Tangerine, Jasmine, Roman Chamomile, Palmarosa and Rose. If you’re looking for a new perfume this Christmas, I’d highly suggest this fragrance!

Spring BlendSpring:

  • Ylang Ylang (2 drops) – This romantic oil promotes hormonal balance and confidence.
  • Clary Sage (2 drop) – Clary Sage has notes of blooms in a spring garden and is very calming.
  • Lemon (2 drops) – Adding this will be perfect to help with and complement your spring cleaning!
  • Stress Away (2 drops) – Absolutely could not live without this one… it brings peace and tranquility, taking the stress away. This has been a saving grace for my adrenal issues!  It contains a soothing blend of copaiba, lime, cedarwood, vanilla, ocotea and lavender.
  • Variation: If you add lavender and remove lemon from this blend, it is perfect for bedtime relaxation anytime!

Summer BlendSummer:

  • Peace and Calming (2-3 drops) – This blend is amazing at uplifting spirits and creating emotional peace.  I also hear it’s great for crazy children home from school for the Summer! It contains Tangerine, Orange, Ylang Ylang, Patchouli and Blue Tansy.
  • Lemon (2 drops)
  • Tangerine (1 drop) – Promotes happiness and relaxation, helping with nervousness (maybe about putting that swimsuit on?)
  • Lime (1 drop) – Reminds me of sipping a margarita by the pool, this oil is great for clearing the respiratory system.

P.S. It’s important to be careful how you diffuse essential oils into the air because when you heat them, it destroys the healing compounds. I use a cool air diffuser that uses ultrasonic technology to mix the oil with water and disperse into the air. Natural Pain Relief

For most of my life, I struggled with some level of back pain on a daily basis.  Chronic pain is just awful and, unfortunately, far too common.  It affects every area of life – relationships, work, exercise, activities; it’s hard to focus on anything other than that pain.  I tried different medications and therapies with no relief, and then suffered the side effects of pills… too much ibuprofen over time actually sent me to the hospital for a week (even though I used as directed by my doctor!).  In fact, recent research has shown that over-the-counter pain relievers increase risk for heart attack and stroke, can have a significantly negative impact on a woman’s fertility, and cause kidney damage.

Eventually, I started looking to natural alternatives to address my health issues and found significant relief.  I still have my bad days, but have found some great solutions that really help.  If you’re looking to try something new without the dangerous side effects of medication, here are my top 5 methods for natural pain relief:

Curcumin SupplementTurmeric

Yes, the spice!  Turmeric has been widely used in Indian medicine for centuries; one of its components – curcumin – is a powerful anti-inflammatory agent. Research has also shown that turmeric helps aid in the “prevention of cancer, protection against heart disease, reduce Alzheimer’s disease symptoms, ease pain and inflammation, boost bone health, protect the immune system from bacterial infections, and increase the liver’s ability to remove toxins from the body.” (Source)

I take a curcumin supplement daily to help with inflammation & my back pain.  You could also add it to your diet – try this delicious turmeric tea recipe or my Coconut Curry Chicken recipe.


Topricin CreamTopricin

This anti-inflammatory pain relief cream is a safe alternative to medication that is effective for muscle, tendon, ligament and nerve tissue pain. It is safe for the elderly (as it does not interfere with medication), kids, pregnant women, and for all skin types.  It has no odor or fragrance, no petroleum and is non-greasy &, non-staining.  When I have back pain, I rub this on and the results are instant.  Plus, its actually working to promote healing, not just masking the pain.


Pain Relief Essential OilsEssential Oils

  1. Drink Water

I know, that sounds way too simple, but listen… Our body is made up of 75% water and our brain tissue is 85% water. Adequate hydration is essential to our bodies and brains functioning properly.  We tend to think that we are “thirsty” when our mouths become dry and we crave a drink, but this is actually the last outward sign of dehydration – if you are feeling this, your body is screaming for water.

Chronic pain is a huge indicator of thirst.  For a while, painkillers may work, but eventually the brain will become so dehydrated that it will register all pain until it gets enough water.  And, until it does, the pain will increase and the body will limit the mobility of those areas in order to “prevent the production of additional toxic waste” that water, if available, would wash out. If you are experiencing consistent back pain, leg pain or headaches, take note.

I’ve started making sure I drink 8 glasses of water per day (if not more) to stay consistently hydrated.  When I do have back pain, the first thing I do is drink several glasses of water to see if the pain passes.  Surprisingly, it actually works most of the time. And if it doesn’t, no harm, and I move on to the other options above.


Chiropractor

If you haven’t visited a chiropractor, you are seriously missing out. I have seen dramatic healing by visiting my chiropractor regularly.  I started off seeing her 3 times a week when my pain was constant, and as I improved, it became less frequent.  Now, I see her for adjustments and some PT or massage every two weeks.  What I have found incredible about adjusting my spine is how much it also affects the overall nervous system and brain.  It’s improved the health of my body as a whole… it sounds a bit crazy, but my chiropractor has also helped with my allergies, ear infections, headaches and digestive issues.

It can be hard to find the right one, but if you’re in Austin, I have a great recommendation for you: Tracie Schwab at Backbone Wellness Center.  Plus, most insurance companies will cover your visits (with a copay) up to a certain number each year.

Antibiotics: Worth a Second Thought

AntibioticsIn 1943, a miraculous drug known as penicillin made its way into our world.  WWII soldiers’ lives were saved. Simple infections no longer risked death. It changed everything.  The development of new antibiotics continued, becoming more widespread and saving millions of lives. Now, antibiotics are essential to all modern medical technology, especially for enabling recovery from surgeries.

While antibiotics have saved many lives, they’re not without risk.  As each new antibiotic has been created, the bacteria have developed resistance.  The creator of penicillin, Sir Alexander Fleming, warned:

“The thoughtless person playing with penicillin treatment is morally responsible for the death of the man who succumbs to infection with the penicillin-resistant organism”

Every time your body is exposed to an antibiotic, the most sensitive bacteria are killed and the remaining get the opportunity to learn how to mutate. Since antibiotics do not discriminate, they kill both good and bad bacteria, ultimately weakening your immune system and leaving the stronger ones to flourish and multiply without good bacteria to balance them.

Not only are we giving ample opportunity for antibiotic-resistant “super-bugs” to flourish, but antibiotics also cause permanent damage to your own gut flora. Recent studies are suggesting that the boost in antibiotic use could be what’s behind the increase in issues like autism, ADD, Alzheimer’s and other brain dysfunction.  This is why a daily probiotic (helps promote good bacteria) and healthy, non-inflammatory diet are crucial.

Having had pneumonia and chronic respiratory infections as a kid, I took a lot of antibiotics.  While they may have helped in those cases, I was also prescribed many antibiotics when I didn’t need them- the most crazy being for acne for eight years… yikes!  My immune system was essentially destroyed and I was sick all the time; medication & additional antibiotics couldn’t help me.  Thankfully, the Lord healed me and I’ve since discovered how I can keep my immune system functioning properly through nutrition, supplements and essential oils.  Now, my body is equipped to do it’s job and fight infections naturally; that’s a really good thing since I’m now allergic to nearly all antibiotics and can’t take them when I get sick.

Resistance is an inevitable process that was fully expected, but it is occurring much quicker than anticipated.  Why?

  • Many 3rd world countries have these drugs available over-the-counter, allowing overexposure
  • In the US, 45-50% of the antibiotics prescribed are unnecessary, meaning they are given for conditions for which antibiotics cannot help at all (for example: viral infections)
  • Animals are pumped full of antibiotics to protect them from factory farming conditions and to make them fatter – 80% of all the antibiotics sold in the US go to farms and thus into the meat & dairy we eat.

Antibiotic resistance is currently causing 700,000 deaths per year, and it’s getting worse.  New antibiotics cannot be developed and tested in the time it takes for resistance to develop. We are drawing near to a future that looks a lot like the pre-antibiotic world. While that’s a little overwhelming, you and I can take some small steps towards change that, together, can make a real difference:

  1. Avoid eating conventional meat, dairy and seafood from factory farms and choose antibiotic-free, organic options instead.  Read more about why it matters here.
  2. If prescribed an antibiotic, ask your doctor if it is actually necessary (is a bacteria or virus causing the infection?) or to test if the kind prescribed will actually be effective against that particular bacteria.

Essential Oils: Where to Start

You’ve probably seen it all over social media… people are obsessed with essential oils.  Personally, I was really skeptical of the whole essential oil thing for awhile, but let me tell you: I tried them and I am now a believer!  They really are amazing and have helped me achieve better health naturally and safely.

If you’ve been wanting to try essential oils and just aren’t sure where to get started, I thought I would help provide a quick guide for you.  It can be a bit overwhelming sorting through all the information – what company to choose, what oils to start with, how to use the oils, and the list goes on.  I’ve done tons of research and I’m here to help!

What Kind to Buy? Does Brand Matter?

I’ve learned from experience that brand really does matter when it comes to the effectiveness of oils.  I’ve tried several brands and now only buy from a couple of companies I know sell pure, high-quality oils that actually work.  Many cheaper store brands use chemicals (in growing, distillation or bottling) or add filler oils and fragrances to the bottle.  Even if they claim to be “pure,” unfortunately, they often aren’t.  Young Living became my favorite company because they own their entire process from Seed to Seal – they grow the plants on their own farms (pesticide-free), distill and bottle the oils themselves.  I trust their oils to be safe and therapeutically effective based both on my research and personal experience.
