Coconut Curry Chicken

Coconut curry chickenToday, I’m sharing another quick & easy recipe that’s full of healthy ingredients & perfect for a weeknight dinner: Coconut Curry Chicken.  This dish packs the flavor and two superfoods with some amazing health benefits:

I use coconut oil in place of all vegetable/canola oils (they have free radicals that are super harmful!), but I also often use coconut milk as a dairy-replacement.

Curry powder spice mix contains turmeric as the main ingredient.  Turmeric has been widely used in Indian medicine for centuries; one of its components – curcumin – is a powerful anti-inflammatory agent. Research has shown that curry powder can aid in the “prevention of cancer, protection against heart disease, reduce Alzheimer’s disease symptoms, ease pain and inflammation, boost bone health, protect the immune system from bacterial infections, and increase the liver’s ability to remove toxins from the body.” (Source)  I also take a curcumin supplement daily and it helps greatly with my back pain.

Ingredients:

  • ~1 lb organic, pasture-raised chicken breasts (boneless/skinless)
  • 1 can (14 oz) unsweetened organic coconut milk
  • 1 can (14 oz) stewed & diced tomatoes
  • 2 tablespoons organic curry powder
  • 1/2 onion
  • 2 garlic cloves
  • 3 tablespoons coconut oil
  • salt & pepper
  • veggies (optional): yellow or red bell peppers, asparagus, mushrooms, snap peas are all great

Preparation:

  1. Cut chicken breasts into 1/2 inch chunks, season with salt & pepper.
  2. Crush garlic cloves & dice onion.
  3. Add above ingredients to a skillet with coconut oil and coat with curry powder
  4. Cook on medium heat until chicken pieces cooked through (usually less than 10 minutes)
  5. Add can of coconut milk and tomatoes and stir to combine.
  6. If you are going to add veggies, add those now.
  7. Reduce heat to low and cover. Simmer for 20-40 minutes, depending on the time you have… the longer the more flavorful.
  8. Serve in a bowl on its own or over rice.

The coconut milk cuts the spice of the curry, so it ends up mildly sweet and full of flavor. The leftovers are even better the next day, so you can savor every last bit. Enjoy!

P.S. While the smell of curry while you are cooking this will make your mouth water, I’m not the biggest fan of waking up to it in the morning… diffusing some lemon essential oil is always in order after I make this dish at my home.

Lemon Cream Pasta

I can’t believe it has been over a year since our trip to Europe.  I so miss the days of walking everywhere, drinking wine & cappuccinos and eating ALL the pasta.  My favorite part of the trip was a 5-hour private cooking class in Lucca, Italy – check out my brother’s travel blog for all the yummy details!  When I am craving comfort food, my new go-to is the lemon cream sauce we learned to prepare.  It’s light and perfect for summer. Today, I’m sharing it prepared two ways.  The flavors in both of these recipes will blow you away… they certainly don’t taste healthy. Plus, both of these recipes can be made in 30 minutes, so it’s perfect for a quick weeknight dinner.

For the Lemon Cream sauce…

Simmer the zest of 1 lemon in a tablespoon of butter or coconut oil for one minute on low heat.

Then add 4 tablespoons of bone broth (or white wine).  I always have bone broth on hand and try to use it as much as possible… it’s a super-food that helps with digestion, supports our immune system, remineralizes our teeth, and is vital for our connective tissues (ligaments, joints).  Simmer for another minute.

Next, add 1 cup of organic heavy cream, the juice of half a lemon and a pinch of sea salt (I use pink Himalayan salt). Bring to a low boil, whisking frequently, to reduce the cream.  After 10 minutes, remove from heat and let it sit – it will continue to thicken as it cools. While the sauce is sitting, you can make the pasta.

Veggie Noodles with Italian Sausage

For a completely grain-free version, you can make “noodles” from squash & zucchini.  I use this julienne peeler to make the veggie strings, but of course you can use a spiralizer if you’re fancy.  Then, saute the “noodles” in a bit of olive/coconut oil over medium heat for a couple of minutes just until they are soft. Season with salt and toss with the warm sauce.

Complete the meal by topping with sliced organic Italian chicken sausage for some protein.

Einkorn Pasta with Kale & Pancetta 

Despite the fact that so many people are having problems with the gluten in modern wheat today, not all gluten is actually bad.  Societies have eaten wheat for the centuries and been entirely healthy… even Jesus broke bread!  Over the years, wheat has been hybridized to increase crop yield and is now high in they type of gluten to which most of us are intolerant.  There is an ancient version of wheat that remains unhybridized and contains a completely different, more digestible version of gluten.  This is the traditional wheat that our ancestors ate and were nourished by.  Many with gluten allergies & intolerances are even able to eat Einkorn wheat without reaction. Anytime I want to enjoy real pasta, I make Einkorn pasta. I buy mine at Whole Foods or Natural Grocers and it’s prepared just like any other pasta.

To complete this meal, I saute sliced pancetta (or turkey bacon) and kale, then toss with the pasta and lemon cream sauce.

A few of my favorite things…

Favorite Natural ProductsMy transition to a more natural lifestyle has been gradual…. I never had a dramatic throw out all products/food moment, mostly because it’s expensive to replace everything all at once.  I first changed my diet for optimal nutrition and as I read more books and blogs, I began to learn how the products we breathe and absorb through our skin affect our bodies just as much as what we eat.  So, I started to change the hygiene and cleaning products that I use in our home. Someday, I’d love to make all my own products… the recipes online are abundant and it’s certainly cheaper, but for now, I buy what I need.  I’ve written about quite a few of these products, but I thought I would put it all together in one easy place for those of you looking for recommendations.  Here’s a very random list of a few of my favorite health and home products:

HIMG_6800ealthy Mouth – Cavities, bleeding gums, root canals, bad breath… chances are that many of you don’t like going to the dentist. Gum disease, in particular, is a serious epidemic now – in 9 out of 10 adults – so, obviously the toothpaste & mouthwash out there isn’t doing a darn thing to help.  The OraWellness brushing blend, made only with organic essential oils, completely transformed the health of my mouth (read more here).  My gum bacterial infection is gone and I’ve healed two cavities – no fillings for me! I also use the toothbrush that they sell – specifically designed with less bristles to gently clean the tooth at the gum line.  – Used by some of the world’s finest spas, this Bentonite clay is not only beneficial for your skin, but has many other healing properties as well. It’s extremely absorptive properties help cleanse the body of toxins – I use it as a purifying face mask, any time I have a rash, as a detox bath, and even drink it in liquid form to cleanse my digestive system when I’m sick. IMG_6810Activated Charcoal – Read my blog post on this amazing substance and how it can be used for teeth whitening, acne, food poisoning, digestive issues, bug bites & stings and even hangovers. Add the capsule or powder version to your first aid kit today.

Coconut Oil – I’m begging you… please throw away those harmful vegetable/canola oils in your pantry and buy this next time you are at the grocery store.  I have replaced all oils in baking and cooking with this – it has incredible healing properties and is really easy to use. And I use it to wash my face and moisturize my whole body; my skin has never been better. Read more about the miracles of coconut oil here.

Natural Deodorants – Last October, with Breast Cancer Awareness Month in mind, I wrote all about some great natural deodorant options that are free of cancer-causing aluminium and parabens.  I recently found another product I love – Primal Pit Paste.  I find the best success in alternating deodorants every other day, so I also currently use Silver Shield Deodorant. Bonus: Both products are made locally and are also man-approved by my husband!

Essential Oils – I’m obsessed.  Sometimes, I wonder what I ever did without them; then, I remember that I took medicine… and suffered for it.  Instead of reaching for side-effect-causing pharmaceuticals, I can now use something safe and natural for my whole family (dog too!). Now’s the time to update your medicine cabinet!

IMG_6804Diva Cup – For women only: that “time of the month” may be a strange topic to discuss, but you should seriously rethink the hormones and chemicals going into your body through the feminine hygiene products you use.  Since the chemical glyphosate is used in growing cotton, you are exposing your body to this cancer-causing toxin every time you use a tampon. I am so thankful for this product; not only is it much safer for my body, but it’s also made a huge difference in the debilitating cramps I used to experience each month.

All-Purpose Cleaners – This is one of the few products I do actually make myself with lemon essential oil because it is just so easy. But, in the past, I have loved using each of these natural products: J.R. Watkins All Purpose Cleaner, Branch Basics, and Young Living Thieves Household Cleaner.  Each of those have great hand soap options as well!

Detergents – Most options you find in the stores have lots of chemicals, and with the items we clean being so close to our skin or even what we eat off of, the ingredients in these products do matter. I highly suggest visiting your local farmer’s market to find a local vendor who sells these as they often work the best, but Seventh Generation makes a couple of mostly natural items I IMG_6802use when I run out and need to buy at the store. The Laundry Detergent can be used in cold water & HE machines effectively and is free of fragrances & brighteners, as well as environmentally-friendly.  The Dishwasher Gel works great too!

Wool Dryer Balls – Did you know that the chemicals in dyer sheets are terrible for the longevity of your clothes and your dryer, as well as bad for the environment? As soon as I learned there was an option that was not only safe in all those aspects, but also dried clothes faster and make clothes softer, I was totally on board.  These are forever reusable and I can add a few drops of whatever essential oil aroma I’m feeling like.  Buy the package of 6 and use them all at once for even better effectiveness.

Summer Reading List

Reading in the SunWith summer just around the corner, I’m dreaming of days by the pool reading and soaking up the vitamin D.  While I typically opt for the easy-to-read young adult dystopian novels (yes, I am a teenage girl, apparently), I’m also excited about the health books I have on my reading list.  For those of you looking for some non-fiction book ideas,  here are a few old favorites on my bookshelf or ones that I am currently reading (and will be writing about very soon)!

Deep Nutrition: Why Your Genes Need Traditional Food – This book changed the way I think about food and my health and was the ultimate inspiration for this blog.

The Coconut Oil Miracle – This was a fascinating read since I had absolutely no clue of all the health benefits that coconut oil could provide.  Read my summary here.

Your Body’s Many Cries for Water – Wow… if anything will convince you how important it is to drink water, it’s this book.  You’ll be surprised how many health problems are a simple result of chronic dehydration – read more in this blog post.

Healing Oils of the Bible – Just started this book and I am already so inspired.  If you are theologically-minded and want to learn more about scriptural healing, this is a must-read.

Nourishing Wisdom: A Mind-Body Approach to Nutrition and Well-Being – One of the hardest things about the transition to a healthy diet has been self-control and our relationship with “good” and “bad” food.  I’m interested to read the author’s take on how we eat being just as important as what we eat.

Essential Oils Pocket Reference – Not really a sit-down and read kind of book, but if you have essential oils, I promise you can’t live without it.  Organized by symptom, you can figure out how to use oils to promote healing.

The Holistic Dog Book: Canine Care for the 21st Century – I’ve always been intentional about feeding my dog the best food and making holistic medical choices for her, but after she got really sick a few weeks ago, I’m more motivated than ever to make sure she has the chance for optimal health.  This book is going to help me make the transition to a raw food diet.  I will certainly share what I learn soon for all you dog-lovers out there.
