Coconut Curry Chicken

Coconut curry chickenToday, I’m sharing another quick & easy recipe that’s full of healthy ingredients & perfect for a weeknight dinner: Coconut Curry Chicken.  This dish packs the flavor and two superfoods with some amazing health benefits:

I use coconut oil in place of all vegetable/canola oils (they have free radicals that are super harmful!), but I also often use coconut milk as a dairy-replacement.

Curry powder spice mix contains turmeric as the main ingredient.  Turmeric has been widely used in Indian medicine for centuries; one of its components – curcumin – is a powerful anti-inflammatory agent. Research has shown that curry powder can aid in the “prevention of cancer, protection against heart disease, reduce Alzheimer’s disease symptoms, ease pain and inflammation, boost bone health, protect the immune system from bacterial infections, and increase the liver’s ability to remove toxins from the body.” (Source)  I also take a curcumin supplement daily and it helps greatly with my back pain.

Ingredients:

  • ~1 lb organic, pasture-raised chicken breasts (boneless/skinless)
  • 1 can (14 oz) unsweetened organic coconut milk
  • 1 can (14 oz) stewed & diced tomatoes
  • 2 tablespoons organic curry powder
  • 1/2 onion
  • 2 garlic cloves
  • 3 tablespoons coconut oil
  • salt & pepper
  • veggies (optional): yellow or red bell peppers, asparagus, mushrooms, snap peas are all great

Preparation:

  1. Cut chicken breasts into 1/2 inch chunks, season with salt & pepper.
  2. Crush garlic cloves & dice onion.
  3. Add above ingredients to a skillet with coconut oil and coat with curry powder
  4. Cook on medium heat until chicken pieces cooked through (usually less than 10 minutes)
  5. Add can of coconut milk and tomatoes and stir to combine.
  6. If you are going to add veggies, add those now.
  7. Reduce heat to low and cover. Simmer for 20-40 minutes, depending on the time you have… the longer the more flavorful.
  8. Serve in a bowl on its own or over rice.

The coconut milk cuts the spice of the curry, so it ends up mildly sweet and full of flavor. The leftovers are even better the next day, so you can savor every last bit. Enjoy!

P.S. While the smell of curry while you are cooking this will make your mouth water, I’m not the biggest fan of waking up to it in the morning… diffusing some lemon essential oil is always in order after I make this dish at my home.

Do You Breakfast?

HoneymoonBreakfast is, by far, my favorite meal of the day.  If I didn’t have to rush out the door each morning for work, I’d take the time to prepare poached eggs, migas or cinnamon french toast with strawberries (paired with a coconut milk cappuccino or mimosa, of course!).  Getting to enjoy breakfast is one of my favorite parts of vacation and the weekends.

But reality is most of us just don’t have time for that. Most of you, I can imagine, skip breakfast altogether most mornings.  I’m sure you’ve heard it time and again, but breakfast really is the most important meal of the day.  It jump starts your metabolism, gives you energy, and prevents the hunger that puts you in a bad mood or causes you to overeat later in the day.  Plus, a healthy breakfast gives your body the best chance of absorbing those vitamins and minerals more easily at the start of the day, cutting down on your cravings later.

When my doctor told me last Fall that I needed to add 80 grams of protein into my diet each day, I knew that I would have to find a way to increase my intake at breakfast.  I thought I would share a few of my quick go-to favorites for those of you looking to mix up your routine:

Poached Eggs on Sprouted Wheat Toast with AvocadoPoached Eggs

If you have an egg poaching pan, this option is as fast and easy as boiling an egg.  While the eggs are cooking, I toast a piece of sprouted wheat bread (read why here), slather with organic butter or coconut oil and then top with sliced avocado.  It takes me about 7 minutes total to throw together this delicious, filling meal.

On a side note, I always make sure to buy free-range, organic, soy-free eggs because they are the most nutrient-dense.  I get this local brand at Whole Foods/Natural Grocers and love them; you truly can taste the freshness: Coyote Creek Farms.

Egg Bacon Muffins

I originally found this recipe on one of my favorite health blogs, Wellness Mama, and I love its versatility.  It is so incredibly easy to mix up a batch and throw in whatever extra vegetables are in your fridge.  Also, bacon!  I will make these on Sunday night for the week.  I usually eat a couple of these at a time – wrap them in foil and warm a few minutes in the toaster oven, then eat them in the car.  If you want to nix the bacon for whatever crazy reason, you can also just whip up some eggs, throw in some diced veggies and bake in muffin tins for mini frittatas.

This is another one of those easy make-ahead options that you can put in a container to grab on your way out the door.  Simply boil a couple of eggs (can’t boil an egg? try this!), throw in a few berries for an antioxidant boost and then I add a muffin or two that I’ve baked on Sunday.  This gluten-free banana muffin is one of my favorite & totally healthy recipes – you can add in a couple tablespoons raw honey if you like it sweeter or some dark chocolate chips and nuts for some texture.

Greek Yogurt & Grain-Free Granola

Yogurt and GranolaGreek Yogurt is a yummy way to get some great protein in the AM with 15 g in 1 cup.  I personally love the Wallaby brand made with organic whole milk from pasture-raised cows and no artificial ingredients. Then, I top with some grain-free granola and fresh berries.  I recently found this Wildway Granola at Whole Foods and fell in love… it’s not cheap but it’s packed with fiber & protein (8g), is completely raw, has no added sweeteners. It is made entirely of fruit, nuts, and seeds, so is gluten-free, paleo and truly the healthiest pre-made version of granola you can buy.  P.S. I also love this as a late night protein snack to help me fall asleep.

GoMacro Bars

If you want an option with zero prep, try these tasty, wholesome breakfast bars.  My favorite is the Peanut Butter Chocolate Chip with 12 grams of protein.  I love this brand because they are organic, GMO-free, soy free (try finding another protein bar that is, especially with chocolate), free of refined sugar AND are reasonably priced compared to other options.  The whole mission of GoMacro is to provide a “macrobiotic” or minimally processed, found-in-nature product. You can buy them individually or by the case for a discount at Whole Foods or Natural Grocers.

Healthy Hygiene Routine

 

Healthy Hygiene RoutineMany people make a good effort to eat healthy and limit the toxins they ingest, but what about the chemicals you are spreading over your body or putting in your mouth during your hygiene routine?  Today I want to share some basic products I use daily and talk a bit about why they are way better than their mainstream alternatives.

Living Clay MaskCalcium Bentonite clay is full of trace minerals and literally vacuums toxins out of the skin. It’s been used throughout history and has so many healing and detoxifying uses.  It’s alkaline 9.7 pH brings the body into balance.  I use it as a mask at least once a week on my face and have seen dramatic improvement in my skin.  If my hormones are going crazy and causing me to break out, then I will use it daily to remove my makeup each night.  You can instantly feel how it stimulates blood circulation and your skin will feel so refreshed and energized afterwards.  When I had an allergic reaction to antibiotics, it helped decrease the severity and redness of the rash. I use the powder form in detox baths and even mix it with water & drink to detoxify my body when I’m sick.  It’s also the perfect shaving cream for those of you who struggle with dry skin and razor burn.  This is one of those products I really could not live without; it’s made my skin clearer than ever!

Coconut Oil – I recently wrote about my absolute obsession with coconut oil and all it’s miraculous healing abilities. In addition to cooking with it, I also use it as a moisturizer all over my body and even on my face.  As it absorbs and moisturizes your skin, you also get it’s benefits internally.  It has anti-aging properties and will help prevent wrinkles; it also helps your skin adjust to sun exposure giving it SPF effects.  And it’s great for removing eye makeup and lip stains.  Best of all, it’s super affordable (especially when you compare it to what you would spend on lotion and expensive face moisturizer) because a little goes a very long way.  I simply melt a few tablespoons on the stove and put it into a small travel sized container for my bathroom counter.

Lavender Essential Oil -I actually mix this with the coconut oil in the container I use for my face moisturizer.  Besides smelling absolutely amazing, lavender oil has many anti-inflammatory and anti-bacterial properties.  It will help heal pimples very quickly, minimizes the appearance of scar tissue, and helps heal cuts and bruises by stimulating circulation.  It’s a great moisturizer for chapped skin, so I use it on my lips too.  Plus, it’s scent helps calm your mind and body, decreasing stress and helping you wind down for a night of restful sleep.

Orawellness HealThy Mouth Blend – The simple fact that you’re never supposed to swallow regular toothpaste always made me suspicious of its safety for putting in my mouth at all.  This is the best “toothpaste” I’ve ever used and I’ve seen incredible improvement in my mouth health over the past year (my dentist has too!).   This is a blend of organic essential oils that fight bacteria and helps heal cavities.  Plus, it doesn’t contain any of the toxic chemical fluoride.  If you have gum problems, cavities, or are just looking for a safe way to clean your teeth, this is a must-try!

Mineral Salts Deodorant – Antiperspirant deodorant works by using aluminum to stop the sweat and odor.  Unfortunately, it also causes breast cancer and Alzheimer’s, so I knew I needed to get it out of my routine.  (TMI) I sweat a lot, which made this the toughest natural hygiene solution to find.  Most products would work for a while or at least stop odor, but I finally found a great solution that is consistently helping with both.  Lafes Deoderant is made with simply 3 ingredients: aloe vera, essential oil and natural mineral salt; it comes as a spray or a roll on.  The mineral salts combat the bacteria that causes odor. I love the lavender scent and while it’s not technically an “antiperspirant,” I’ve noticed that my sweating has decreased the more I use it.  I buy mine at my grocery store, Natural Grocers, and it lasts months using only once a day.  Lastly, it doesn’t leave stains or marks on your clothing like the regular ones always do – a great bonus!

As for the “beauty” department, I am researching and testing different makeup and hair products to find healthy options that actually work.

Hair Products – I am currently using Kevin Murphy shampoo, conditioner, hair spray and dry shampoo.  They are sulfate and paraben-free and work amazing, but still use a lot of chemicals I am not comfortable with.  I’ve tried many of the organic options from the grocery store but found my hair was oily and flat within just a week of use.  I am considering making my own as soon as what I have runs out, and I will certainly keep you updated on that adventure.

Makeup – I’ve used Origins, Arbonne, and MineralFusion from Whole Foods, but they are all so expensive and don’t have the lasting power that I really want.   I feel like when I come home from work it looks like I didn’t even put makeup on that day.  Looking for any and all recommendations!!

A few months ago, I put together a yummy list of healthy places to eat out in Austin.  Many of you had great recommendations to share and were excited to have the list for reference, so I thought I would continue the series and share a few more that I’ve discovered with you.

Here are a few places I’ve eating that I forgot to mention last time or have tried from my bucket list since then:

  • Jack Allen’s Kitchen – Locally sourced Texas cuisine; the homemade pimento cheese is awesome and I don’t think there’s anything on this menu I wouldn’t love
  • La Condesa – Locally sourced modern Mexican; I loved all the healthy options they have to offer on their menu and the atmosphere can’t be beat, but I must admit it’s quite pricey for what you get, so I didn’t think it quite lived up to all the hype.
  • Snap Kitchen – Currently obsessed with this place for easy, healthy lunches to bring to work – read my full review here.
  • Monument Cafe – Adorable roadside cafe right off Georgetown Square with fresh & locally sourced meat and produce, some of which is even from their own garden.  Try the seasonal vegetable specials so you can finish your meal with a slice of the most amazing chocolate pie you’ll ever eat.  Living healthfully means living balanced, right? 
  • El Monumento – A place you’d never think to find in Georgetown, this restaurant has a cool, modern feel to it and a beautiful terrace overlooking Blue Hole Lagoon. Awesome interior Mexican food with local ingredients and wild-caught seafood.  And the cocktails are great too!
  • Vino Vino – Evan and I had our first date here – it’s the perfect romantic spot for date night!  They have lots of local menu items, with some delicious raw cheese options and yummy salads. Oh, and the wine is pretty great too.
  • Texas French Bread – Love this place for breakfast.  They have free-range eggs and pretty much everything is homemade.
  • Greenhouse Craft Food – Another great place for breakfast with lots of locally sourced meat, eggs and produce.  It took us forever to decide what to get because the whole menu looked just awesome.  And for those of you with kids, it’s super family-friendly!

And now to add a few more to my ever-growing bucket list of more places to try in Austin:

  • Picnik Austin – Paleo, gluten-free coffee & more!
  • Epicerie – French cafe
  • Noble Pig Sandwiches – Unique breakfast & lunch sandwich creations
  • Eastside Pies – Pizza; they even get some produce from a community farm I volunteer at – Urban Roots – check it out!
  • Wholly Cow Burgers – The name says it all…
  • Swift’s Attic – Creative small plates and craft cocktails
  • Searsucker – New American cuisine with farm to table specialties
  • Qui – Recently named “the best new restaurant in America,” and it’s right here in Austin… why haven’t I been yet!?
  • Benji’s Cantina – Their Vital Farms chicken fajitas are apparently the best (but most expensive) in town
  • Chavez – Brand new at the Radisson on Town Lake.. it’s the newest to the Parkside/Olive & June family
  • Odd Duck –  Intensely local, seasonal fare
  • Josephine House – The cutest spot in Clarksville offering lunch, afternoon snacks and evening drinks
  • Cenote –  A truly local coffee shop
  • Arro – The focus of the kitchen is a wood-fired grill, incorporating local and organic products whenever possible. 
  • Dolce Neve – Authentic gelato made with milk from County Line Farms – the only truly local, organic, grass fed pastured dairy in Texas

Healthy, Fast: Snap Kitchen

One of the best things about being a wellness & food blogger is all the awesome people I get to meet who think and feel the way I do about health.  It is so encouraging and reaffirming to keep on my journey towards true health.  About a month ago, the CEO at Snap Kitchen stumbled upon my blog and was compelled by my story, so I was invited to meet the head chef, see their kitchen and have lunch with their Marketing Director and Chief Dietitian last week!  It was a great experience, getting to enjoy a yummy wild-caught Salmon salad loaded with local veggies & goat cheese, and hear about their philosophy and passion for nutrition.  I got to share how changing my diet changed my body, so drastically improving my health and about why I started this blog.  They are fellow “foodies” who share in a desire for great tasting, good-for-you food.

If you haven’t heard about Snap Kitchen, consider yourself told.  It’s a place where you can stop in and get fresh, pre-packaged meals that are totally healthy and portion controlled.  The ingredients are right on the label of each container, and there’s nothing on there that you have to question; it’s all real food.  As a gal who reads labels constantly, this is such a relief – it’s not full of “modified,” something-“ized,” or other chemically altered ingredients.  I saw their kitchen and there was nothing I wouldn’t have in my own.  There was no freezer and extremely few “pantry” items – mostly spices. Plus, most of their ingredients are organic and local, which makes me confident about the level of nutrition I’m getting and supporting the farms in my community. I had a delicious egg white breakfast bite earlier this week with huge leaves of spinach that were so garden fresh. Their menu is seasonal and based on the freshest ingredients they can get, so you’ll never get bored with all they have to offer.

The meals come packaged in BPA-free plastic containers that can be reused and are quick to warm up in the microwave.  For me, they are the perfect weekday lunch.  I can grab it on my way out the door each morning, rather than leaving it up to how much time I might have to go grab something nearby or sticking with my boring everyday salad.  This week, I enjoyed crispy chicken “breaded” with nuts over veggies, beef stroganoff with greens and butternut squash & turkey macaroni.  Having grown up on comfort food, I crave it constantly and love finding guilt-free versions of those meals that actually taste good.  I can’t wait to try their quinoa “mac & cheese” and vegetable lasagna.

As I’ve mentioned before, I am paying particular attention to avoiding inflammatory foods, and Snap Kitchen is perfect for that.  They don’t use canola/vegetable oil – only olive oil and grapeseed oil for their cooking (if only I could convince them to use coconut oil!), they use very little sugar, the soy is easy to spot in the few meals it’s in and with lots of paleo and vegan/vegetarian options, I can get the protein and veggies I need while avoiding grains and not sacrificing taste.

If you are a fan of My Fit Foods (or just looking for a better on-the-go option), I highly recommend you try Snap Kitchen.  You will appreciate the real ingredients in their foods, knowing that you are really getting the nutrition you need to be healthy.  Portion control isn’t everything, y’all.. this is all about getting well.  Plus, if I’m being honest (I don’t make any money from this blog, so I can say whatever I want, right?), the food simply tastes better.
